Low-temperature vinification and aging focus on extracting aromas, tannins and flavors in keeping with the Cazenove taste profile.

Grape varieties and plots are vinified separately. Each year, the must characteristics guide the vinification choices.

Punch-downs are excellent for fully extracting color, flavors and tannins.

Blending takes place during aging.
